This is an iconic Fino sherry. With grapes exclusively from the famous Macharnudo Alto vineyard, the wine is fermented in barrel using indigenous yeasts, and spends an extraordinary 10 years in solera under flor. The wine is medium-depth straw-yellow. It smells of sea wrack and salt, acetaldehyde of course, showing as lightly toasted almonds, iodine and crushed shells, with hints of dried herbs and lemon. It is bone dry, with a gentle warmth from the alcohol balanced by firm acidity. Perhaps a little more lemon shows on the palate, but mostly the salty, seashell and seaweed tones drive into the finish.
